dang. i was huuuuungry today — both for success and recovery and for actual food. i can’t decide if that’s because i’ve finally been filling my body with real foods and it is craving more of them, or just because my body is used to eating more (but junk). either way, i decided to honor my hunger and filled with with delicious eats all day. in list format, this is what my digestive system had fun with today:
overnight oats (1/2 c. oats, 1/2 c. yogurt, pb and j), grapefruit, baked tofu (three slices), two bites of chicken (before i rememered chicken freaks me out), green beans with onion, lettuce with broccoli/artichoke hearts/cucumber and a roasted tomato vinaigrette, bite of mushroom risotto (lunch was provided by the office today, heavier than i would like but hey! it’s free!), an apple, handful of snap peas and a pickle. is that too much? or do i just have a skewed vision of a healthy amount of food for a girl who is 5’6″ and active?
dinner, after a kickass 5 mile run (woo!!) in 53:35 (slower than i would like, 5 was hard, and i most definitely took walking breaks) was this:
small sweet potato with grey poupon, the mustard of all mustards, broccoli, and a homeade veggie burger topped with tomato sauce and some frank’s. i mashed chickpeas with an egg, spinach, chili flakes, garlic powder, lemon juice and italian herbs. they were delicious, but a little bland and also were crumbly. i’ll have to tweak the “recipe.”
and now, what you’ve all been waiting for. or not, i just want to recap my weekend because it was so wonderful. girl time was much needed! saturday was full of laughs, dinner out at busboys and poets, a wonderful spot in dc that encourages intellectual conversation. it’s part bookstore, part restaurant, part coffee shop and part bar. we split the roasted pear salad and the turkey burger with the best sweet potato fries i have ever had! oh yeah, we also killed a bottle of wine. then, the dancing and singing commenced.
valentine’s day was one of my most special so far. best friend and i played a soccer game (well, she watched while myteam and i played), had brunch with everyone, walked around and then went to see valentine’s day. cliche alert! it was alright, pretty much what i was expecting. i also love jennifer garner and bradley cooper (oh, Alias). we came home late and cooked a droolworthy meal….
The above is roasted asparagus, tossed in evoo and salt and roasted at 350 for 20 minutes, quinoa with peas and carrots tossed with a smidge of evoo and soy sauce, and the star of the show: canadian turbot.
we sauteed half of an onion and a few garlic cloves in evoo until the onions were translucent. we then added peeled whole tomatoes and crushed them, releasing more juices. we sprinkled in chili flakes and basil flakes and let the sauce reduce until bubbly and delicious, when we laid the beautiful filet into the sauce. the fish poached completely in about 5 minutes and was flaky and delicious – it melted in your mouth and was literally show stopping. simple, but amazing. dessert was some pineapple, and more wine of course.
now, i’m sitting in pjs watching law and order and getting sleepy. i feel accomplished today, and for me these days, that’s all i can ask for.
